These pink champagne Linzer cookies are the perfect treat for Valentines Day!!!
The last time I had champagne, I was floating down the Seine river in Paris watching the Eiffel Tower shimmer with my husband. It was an amazing evening I will never forget. I wanted to create a pink champagne cookie for the holiday to relive that moment together. I hope you enjoy them as much as we have at our house!!
I used this recipe from Cambrea bakes and substituted her cranberry jam for a pink champagne jelly. I saved the inside smaller cookies and covered them in sprinkles for the little ones.
To assemble the cookies, dip the cut out cookie in powdered sugar. Spread some jelly on the cookie without the cutout a little larger than the heart that will be placed on top of it. Place the powdered cookie on top and let the jelly set. This will hold the cookie together.
