My husband often tells me of fond memories he has of his Grandma Hardman. She passed away when we were dating. I only got to meet her once but I remember how warm, kind, and beautiful she was. I know he misses her all the time. This cherished recipe we make was hers. Anytime we are invited to a party, we are always asked to bring the cheesecake, and this is that recipe. Thank you for giving it to us Grandma. May it always remind us of you!
For the cream cheese:
- 3 packages (8oz) of cream cheese (softened)
- 2 cans (14oz) of sweetened condensed milk
- 2 tsp. of lemon juice
- 1 container (8oz) of cool whip
For the crust:
- 1 cup of graham cracker crumbs
- 1/3 cup of melted butter
- 1/4 cup of sugar
Directions:
For the cream cheese: Beat the cream cheese until creamy. Add the sweetened condensed milk and lemon juice and beat again until creamy. Fold in the cool whip.
For the crust: Mix together crumbs, sugar and butter. Place in the bottom of your container and gently pack. You can use a 9×13 dish or 4 ounce mason jars.
Add the cream cheese on top of the crust. Refrigerate for 3 hours and add topping if desired. Its really cute in the mason jars with an additional layer of cherries on top. Perfect neighbor gift if you ask me. Just pop the lid on top and it makes for easy transport.
