Ingredients:
- 1 1/2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1/4 cup brown sugar, packed
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup milk
- 3 medium apples (a mix of sweet and tart), peeled, cored, and sliced thin
- 1 tbsp lemon juice
- 1 tbsp granulated sugar + 1/4 tsp cinnamon (for topping)
Instructions:
- Preheat oven to 350°F (175°C). Grease and line a 9-inch round cake pan with parchment paper.
- Prepare apples – Toss sliced apples with lemon juice and set aside.
- Mix dry ingredients – In a medium bowl, whisk flour, baking powder, salt, cinnamon, and nutmeg.
- Cream butter and sugars – In a large mixing bowl, beat butter, granulated sugar, and brown sugar until light and fluffy.
- Add eggs and vanilla – Beat in eggs one at a time, then add vanilla extract.
- Combine – Add dry ingredients to the wet mixture in two additions, alternating with milk. Mix just until combined.
- Assemble cake – Spread half the batter into the prepared pan. Layer with half the apples. Repeat with remaining batter and apples.
- Top and bake – Sprinkle the sugar-cinnamon topping over the apples. Bake 45–50 minutes, until a toothpick inserted in the center comes out clean.
